S'mores

S'mores. An American campfire classic. A treat that young and old love. A delicious graham cracker sandwich. Who wouldn't love that?

Well, the Henry kids of course!! We introduced them to a s'more last weekend. Dylan had been talking about them for weeks, so we decided to take the plunge and make them. Did the s'more live up to the hype in Dylan's mind. NO!! Once he realized it would mean his hands would get dirty, he immediately decided this treat wasn't for him. He requested a non-melted s'more. So he ate the marshmallow, chocolate, and graham cracker separately. What a goof! Emersyn did the same because it was hot and too much for her little mouth to handle.

Baking Buddies

I love to bake! Last weekend I made Neopolitan cupcakes. Dylan & Emersyn love to watch & occasionally help.
They like to assist in adding the ingredients and stirring the batter.
Oh, did I mention they are great taste testers!!!

Neopolitan cupcakes:
Brownie on the bottom, strawberry cake on top, with cream cheese or vanilla frosting.
1 box of fudge brownie mix
1 box of Strawberry Cake mix
1 can of frosting (Vanilla or Cream Cheese is recommended)
Cupcake pan
Cupcake liners
Makes about 30 cupcakes

Follow the directions on each of the boxes mixes. Pour 1/3 of brownie mix in pan , then pour strawberry mix on top of brownie mix. Bake 350 for 18-21 minutes

I played with the amount of brownie mix vs. strawberry mix. I guess it all depends on how much of each mix you want the cupcake to have. Let them cool before icing.

Emersyn received a bunch of baby dolls for Christmas. She goes in spurts of playing with them. When she does, it's so cute watching her play, take care of, and stroll her babies. I heard her this morning saying 'Don't cry baby' and 'eat baby'.

Sometimes she gets embarrassed when I try and capture her in the moment. Today I was lucky!

Vintage Coat

Look beyond this beautiful model :-) to view her vintage red coat. This coat was mine when I was little. It's a tad snug, but I couldn't pass up this opportunity for her to wear it. The coat is in great condition for being 30 years old!!! Doesn't she look so cute?!?!

Fun in the Sun!

We had a beautiful weekend. We spent much of our time outdoors. Last year we bought the kids a water table and they loved it. This was the perfect weekend for it. The kids also helped with yard work, pulled every toy out of the garage, and had fun exploring the outdoors.

Spring has Sprung!

Spring is finally here! Warmer weather, tree's budding, pollen in the air, birds chirping, and neighbors outside. Love it all! Well, not the nasty pollen! I could do without it!

Our kids thrive on outside time. We try and play outside once in the morning and after nap or before dinner.

I found some pictures I've taken over the last few weeks and wanted to post them.
My blog is for family but also for me. Sort of a journal.

Easter 2013

Easter Sunday was rainy here in Holly Springs, but that didn't stop us from having an 'egg'stra special day. The kids woke up and had an indoor egg hunt. Baskets filled with fun books, toys, and activities awaited them at their breakfast spot. It was a relaxing day inside filled with fun and lots of candy!

Grandma's Visit

 
 
Two weekends ago my Mom came to visit us. Time goes by so fast when we have off and are having fun. We all spend six great days together. Dylan calls my Mom "Grandma", while Emersyn calls her "Oma" because she can't say Grandma. Oma in German means Grandma, so it's fitting seeing as though we are half German.
 
 
We spent much of our time playing. We also went to Pullen Park which in the pictures is the train and boat rides. We played out side, got ice cream from the neighborhood ice cream man, snuggled, laughed, and had loads of fun. It's been days since Grandma has left and the kids still wake up and say "Is Grandma here?" or Emersyn yells "Oma, Oma!". 






St. Patricks Day this year was a bit different. Usually we just wear green, but with Mom in town we had all sorts of fun. She brought fun glasses, headbands, and green pancakes for us to eat. We went out to dinner at night and changed our name temporarily to the O'Henry's :-) Even our Russian dogs were Irish for the day!

 



Living far away continues to have its challenges. We miss being around family, so when we get visitors it makes the moments even more special.
